I realise this is an older post but I think I have a decent answer. Mixing species can be a visual way to represent a mixture of archetypes. Dragons are associated with both nobility and hoarding so they have that duality of good and evil, cow are thought of as lazy creatures willing to get fat and wolves are (due to their connection to us) connected to power and humanity.

isn’t related with the pigs meanwhile the cows are related with the fertility?.. but yeah, Cows can be really fat so make sense those mixes.
